Fish in a Parcel

4 x mackerel cutlets

Freshly ground black pepper

1 tbsp. lemon juice

65gr grated tasty cheese

4 spring onions, chopped

1 medium cucumber, sliced

• Preheat oven to moderate temperature (180  C).

• Place each cutlet on a piece of greased heavy-duty al-foil.

• Season with pepper and lemon juice.

• Divide grated cheese among cutlets.

• Sprinkle with spring onion, and top each cutlet cucumber slices (about 4-6 slices on each cutlet).

• Wrap foil around cutlets and seal.

• Place on oven tray and bake in pre-heated, moderately hot oven for 20-25 minutes.

• Serves 4.
